The Premier Green Initiative

We never forget that our ingredients come from the earth, which makes us stewards of our world’s fragile ecosystem. We feel a profound sense of duty to do everything we can to help sustain and protect the earth while maintaining our world-class service and cuisine. The Premier Green Initiative acknowledges our place in the larger world – and our responsibility to maintain a balance between our business and the Earth.

 

 

Through the Premier Green Initiative, we:

 

Self-Awareness / Customer

  • Raise awareness and introduce models for utilizing organic, sustainable products.
  • Being “green” is not just something we give lip service to; it’s an integral part of every decision we make.
  • Engage environmentally conscious purveyors within an actionable geographic area.
  • Actively engage in the recycling of renewable resources beyond what is required by law
  • Implement energy efficient trucks in our deliveries

 

Sourcing / Culinary

  • Offer authentic “farm to table” dinners where our chefs personally select the finest locally grown and produced ingredients from highly regarded farms in the area.
  • Use plate-ware, cutlery, and other products made from compostable and renewable resources, including eco-friendly palm leaves, compostable plant-based plastics, sugarcane, and corn husk.
  • Partner with fuel companies to filter and refine waste and cooking oil into biodiesel, a green fuel source.
  • Organically grow tomatoes, cucumbers, basil, herbs, and much more in our own urban garden.
  • Most of our meat and produce purchases are sourced within 100 miles of our facility, which encourages support of our local communities and reduces carbon emissions attributed to shipping food.
  • Proactively develop recipes that feature local and artisan products.
  • Composting kitchen scraps and recycling plastics, glass, aluminum, cardboard, and paper keep up to 80% of our waste out of landfills.
  • Compost thousands of pounds of food trimmings each week, helping to reduce our waste sent to the landfill
  • Train all of our staff on our environmental program and empower them to contribute and work towards a healthier and more sustainable lifestyle, in and out of the office
  • Continually improve our practices by measuring our environmental impacts and setting strict annual goals

Company Expectations

  • Whenever possible, our event staff carpools. In addition to cutting down our carbon footprint, we discuss your event’s details on route and save parking spaces for your
  • 100% of our lights are LEDs, which use up to 90% less energy, last longer, contain no mercury, and emit fewer greenhouse gases than incandescent bulbs.
  • We installed high-efficiency pre-rinse sprayers at the washing station in our operations department, saving over 1,000 gallons of water per year.
  • Our facility is styrofoam free, which keeps harmful chemicals and litter out of our environment.
  • We installed low flow aerators on our hand and prep sinks, saving enough water to fill 7 backyard swimming pools per year.
  • We off set 20% off our annual energy use, by generating renewal energy with on-site photovoltaic cells.
  • By using occupancy sensors in our offices and restrooms, we reduce unnecessary energy use by nearly 60%.
